Thanksgiving does not need a new menu. A few Moroccan ingredients can lift the dishes you already make, and most take almost no extra effort. Here are five ideas for this year's table.
1. Roast sweet potatoes and carrots with ras el hanout
Toss chopped vegetables with olive oil, salt and a spoonful of ras el hanout, a warm Moroccan spice blend. Roast until the edges caramelize. A drizzle of honey at the end brings out the sweetness.
2. Swap the stuffing for couscous
Need a lighter side, or something for guests who cannot eat bread stuffing? Fluff cooked couscous with butter, dried fruit, toasted nuts and fresh herbs. Our couscous guide shows how to make it light and fluffy.
3. Add a harissa kick
Stir a little harissa into mayonnaise for a spicy sandwich spread for leftovers, or mix into yogurt as a dip for roasted vegetables. If you are new to it, read what harissa paste is and start with a small amount, because it varies in heat.
4. Serve apricot jam with the cheese board
Sweet and tangy apricot jam pairs well with soft cheese, crackers and nuts. You can also brush a little onto a roast before it goes in the oven for a glossy glaze. Browse Aicha jams for flavors.
5. End the meal with mint tea
After a heavy dinner, nothing settles the table like a pot of hot Moroccan mint tea. Brew it in a brass teapot, pour from a height into small glasses and pass around sugar cubes. Follow our mint tea guide for the full method.
A few hosting tips
- Taste spice blends before adding more; brands differ in strength.
- Make the couscous and roasted vegetables ahead and reheat them.
- Set the tea tray out early so the hosting looks effortless.
